  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Oat Topping:

  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and cut into small cubes)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Prepare fruit mixture: In a large bowl, combine peaches, blueberries, lemon juice, granulated sugar, cornstarch, and vanilla. Pour into greased baking dish.
  3. Make oat topping: In a separate bowl, mix oats, flour, brown sugar, cinnamon, and salt. Add butter and mix until crumbly.
