Units Scale

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 4 ripe bananas, mashed (about 1 1/2 cups)
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat the oven and prepare the pan: Preheat the oven to 350°F and grease a 9×5-inch loaf pan.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt; set aside.
  3. Cream butter and sugar: In a large mixing bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs and bananas: Add the eggs one at a time, mixing well after each. Stir in the mashed bananas and vanilla extract until fully incorporated.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the nuts if using.
  6. Bake the bread: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool and serve: Allow the banana bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
