6cups chicken broth
3/4cup pastina (tiny star-shaped pasta)
1 tablespoon unsalted butter
1 egg
2 tablespoons grated Parmesan cheese
Salt and black pepper to taste
Chopped fresh parsley for garnish (optional)
Instructions
In a medium saucepan, bring the chicken broth to a boil over medium-high heat. Add the pastina and butter, then reduce heat to medium and cook according to package instructions, about 5–6 minutes, stirring occasionally.
In a small bowl, beat the egg and Parmesan cheese together. Once the pastina is tender, reduce the heat to low. Slowly drizzle in the egg mixture while stirring the soup gently to create ribbons of egg throughout.
Season with salt and pepper to taste. Serve hot, garnished with fresh parsley if desired.
