Pasta:

  • 12 oz pasta (such as penne or spaghetti)

Other Ingredients:

  • 2 Tbsp olive oil
  • 3 garlic cloves, minced
  • 6 cups fresh spinach leaves, washed and dried
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 1 Tbsp lemon juice
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Reserve ½ cup of the pasta cooking water and drain the rest.
  2. Sauté Garlic and Spinach: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add spinach and cook until wilted, stirring occasionally, about 2–3 minutes.
  3. Combine Ingredients: Add cooked pasta to the skillet along with lemon juice and a splash of the reserved pasta water. Toss to combine and create a light sauce. Stir in Parmesan cheese until melted and creamy, adjusting with more pasta water as needed.
  4. Season and Serve: Season with salt, black pepper, and red pepper flakes if using. Serve hot with extra Parmesan on top.

Notes

  • For added protein, toss in grilled chicken or shrimp.
  • Use whole wheat or gluten-free pasta if preferred.
  • Fresh spinach works best, but thawed frozen spinach can be used if well-drained.
