Parmesan Smashed Potatoes:

  • 1 1/2 pounds baby Yukon Gold or red potatoes
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional)

Garlic Dip:

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic (minced)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the potatoes: Boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and cool slightly.
  3. Flatten the potatoes: Place potatoes on the baking sheet and gently press each with the bottom of a glass to flatten.
  4. Season: Drizzle with olive oil, sprinkle salt, pepper, garlic powder, smoked paprika, and Parmesan.
  5. Bake: Bake for 25–30 minutes until golden and crispy.
  6. Make the dip: Whisk together sour cream, mayonnaise, garlic, lemon juice, salt, and pepper.
  7. Serve: Serve hot potatoes garnished with parsley, alongside the garlic dip.
