Acorn Squash:
1 medium acorn squash, halved, seeded, and sliced into 1/2-inch wedges
Seasonings:
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon salt
1/4 teaspoon black pepper

1/3cup grated Parmesan cheese

Instructions
Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Squash: Toss acorn squash slices with olive oil, garlic powder, thyme, rosemary, salt, and pepper. Arrange on the baking sheet.
Roast: Roast for 20 minutes, flip slices, sprinkle with Parmesan, and roast for another 10–15 minutes until golden brown.

Notes
For a crispier finish, broil the squash for the last 1–2 minutes.
You can eat the squash skin if it’s soft or peel it after roasting.
