Vegetables:

  • 1 tablespoon unsalted butter
  • 1/4 cup finely chopped white onion
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped red bell pepper
  • 1 small Roma tomato (diced)
  • 1/4 cup diced green chiles (mild or hot)

Spices and Herbs:

  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder

Others:

  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 8 oz white American cheese (shredded or chopped)
  • 4 oz cheddar cheese (shredded)
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. Sauté Vegetables: In a medium saucepan, melt the butter over medium heat. Add the onion and both bell peppers and sauté for 3–4 minutes until soft.
  2. Add Spices and Cheese: Stir in the tomato, green chiles, cumin, garlic powder, and chili powder. Sprinkle in the flour and stir continuously for 1 minute. Slowly whisk in the milk, then add the white American cheese and cheddar cheese.
  3. Melt and Serve: Reduce heat to low and stir until the cheese is fully melted and the dip is smooth. Keep warm and serve with tortilla chips. Garnish with cilantro if desired.
