Shrimp:

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil (divided)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Chimichurri Sauce:

  • 1/2 cup fresh parsley (finely chopped)
  • 2 tablespoons fresh cilantro (optional)
  • 3 cloves garlic (minced)
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup olive oil

Instructions

  1. Prep the Shrimp: Pat the shrimp dry and toss with 1 tablespoon olive oil, salt, pepper, and smoked paprika.
  2. Sear the Shrimp: Heat a skillet over medium-high heat, add remaining olive oil, and sear shrimp for 2–3 minutes per side until cooked.
  3. Make Chimichurri Sauce: Whisk together parsley, cilantro, garlic, vinegar, red pepper flakes, salt, pepper, and olive oil.
  4. Combine & Serve: Spoon chimichurri over shrimp, toss gently, and serve warm.
