This Overnight Taco Pasta is a delicious Tex-Mex inspired casserole that can be prepared the night before for an easy and flavorful meal the next day. Loaded with pasta, seasoned ground meat, beans, corn, and plenty of cheese, it’s a comforting dish that’s perfect for busy weeknights or potlucks.

Ingredients

Pasta:

12 ounces rotini or penne pasta

Taco Meat:

1 pound ground beef or ground turkey, 1 packet taco seasoning, 1/2 cup water

Additional Ingredients:

1 (10 oz) can diced tomatoes with green chilies (drained), 1 cup corn, 1 (15 oz) can black beans (rinsed and drained), 1 cup sour cream, 1 1/2 cups shredded cheddar cheese, 1/2 cup shredded Monterey Jack cheese, 1/4 cup chopped green onions, optional toppings: crushed tortilla chips, extra cheese, jalapeños

Instructions

  1. Cook the Pasta: Cook pasta according to package directions until al dente. Drain and set aside.
  2. Prepare Taco Meat: In a large skillet over medium heat, cook ground beef until no longer pink. Drain excess fat. Stir in taco seasoning and water; simmer for 2–3 minutes until thickened. Remove from heat.
  3. Combine Ingredients: In a large bowl, mix the cooked pasta, taco meat, diced tomatoes, corn, black beans, sour cream, 1 cup cheddar cheese, and half of the green onions.
  4. Assemble and Chill: Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle with remaining cheddar and Monterey Jack cheeses. Cover tightly with foil and refrigerate overnight.
  5. Bake: When ready to bake, preheat oven to 350°F. Bake covered for 25 minutes, then uncover and bake an additional 10–15 minutes until bubbly and cheese is melted. Garnish with remaining green onions and desired toppings before serving.
