Description

This easy and delicious Cabbage Steaks recipe features thick slices of green cabbage roasted to perfection with garlic, salt, pepper, and olive oil. Perfect as a healthy side dish or a vegetarian main, these roasted cabbage steaks offer tender centers and crispy caramelized edges for a flavorful and nutritious meal.

Ingredients

Scale

Produce

  • 1 head of green cabbage

Spices & Seasonings

  • 1 teaspoon (3 g) kosher salt
  • ½ teaspoon (2 g) garlic powder
  • ¼ teaspoon black pepper

Oils

  • ¼ cup (60 ml) extra-virgin olive oil

Instructions

  1. Heat the Oven: Adjust the oven rack to the middle position and preheat your oven to 400ºF (204ºC). Line a large sheet pan with olive oil or lightly grease it to prevent sticking.
  2. Slice the Cabbage: Using a large knife, trim the bottom of the cabbage core so it will sit flat as a stable base. Remove any loose outer leaves, then slice the cabbage lengthwise into 1-inch thick steaks. Place the cabbage steaks in a single layer on the prepared sheet pan to ensure they roast evenly.
  3. Season the Cabbage: In a small bowl, combine the kosher salt, garlic powder, and black pepper. Brush olive oil on all surfaces and sides of each cabbage steak, then sprinkle the seasoning mixture evenly over them. Flip the steaks over and repeat the oil brushing and seasoning on the other side.
  4. Roast: Place the sheet pan in the preheated oven and roast the cabbage steaks for 35 to 40 minutes. Rotate the pan halfway through the cooking time for even browning. The cabbage is done when the edges turn a deep golden brown and the centers become tender. Optionally, brush with extra olive oil and add more salt and pepper to taste before serving.

Notes

  • Use a sharp knife to ensure clean cuts for even cooking.
  • To add extra flavor, sprinkle with smoked paprika or chili flakes before roasting.
  • For a vegan option, no modifications are needed as the recipe is plant-based.
  • Serve as a side dish or top with your favorite sauce or cheese for a hearty main.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven for best texture.
