  • 4 bone-in, skin-on chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Rice Mixture:

  • 1 cup long grain white rice (uncooked)
  • 2 1/4 cups low-sodium chicken broth
  • 1 tbsp olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced carrots
  • 1/2 cup frozen peas (optional)

Garnish:

  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C).
  2. Season the Chicken: Mix garlic powder, onion powder, paprika, thyme, salt, and pepper. Rub the seasoning over the chicken thighs.
  3. Prepare the Dish: In a 9×13-inch baking dish, combine rice, chicken broth, onion, carrots, and peas. Place seasoned chicken thighs on top, drizzle with olive oil.
  4. Bake: Cover with foil and bake for 50 minutes. Uncover and bake for 15–20 minutes until chicken is golden and rice is tender.
  5. Rest and Serve: Let it rest for 5 minutes before serving. Garnish with parsley if desired.

  • You can substitute chicken breasts but adjust baking time.
