Cake:

  • 1 box orange cake mix
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tbsp orange zest

Creamsicle Frosting:

  • 8 oz cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 2 tbsp orange juice
  • 1 tsp orange zest
  • 3 1/2 cups powdered sugar

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch cake pan or two 8-inch round pans.
  2. Prepare the cake: In a large bowl, combine the cake mix, orange juice, oil, eggs, and orange zest. Beat with an electric mixer for 2 minutes until smooth and fluffy. Pour the batter into the prepared pan(s) and bake for 25–30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
  3. Make the frosting: Beat the cream cheese and butter until creamy. Add vanilla, orange juice, and zest, then gradually beat in the powdered sugar until smooth and fluffy. Frost the cooled cake evenly and refrigerate for 30 minutes before serving for best texture.
