  • 1 small yellow onion (thinly sliced)
  • 2 green onions (sliced, white and green parts separated)
  • 2 cloves garlic (minced)
  • 2 eggs (lightly beaten)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper

Instructions

  1. Cook the Beef: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the sliced beef and cook until browned. Set aside.
  2. Sauté Vegetables: In the same skillet, cook yellow onion and white parts of green onion until softened. Add garlic and cook briefly.
  3. Scramble Eggs: Push vegetables to one side of the pan, pour in beaten eggs, scramble until cooked, then mix with the onions.
  4. Add Rice and Seasonings: Stir in cold rice, soy sauce, oyster sauce, sesame oil, and black pepper. Return beef to the skillet and combine.
  5. Finish and Serve: Cook until heated through, garnish with green onion tops, and serve hot.

Notes

  • For best texture, use cold, day-old rice.
  • You can add frozen peas or chopped carrots for extra veggies.
  • Substitute chicken or shrimp for the beef if desired.
