Noodles:

  • 12 ounces spaghetti or lo mein noodles

Vegetables:

  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup shredded carrots
  • 1 cup snap peas
  • 3 green onions, sliced

Sauce:

  • 1/3 cup low-sodium soy sauce
  • 1/4 cup teriyaki sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons brown sugar

Other:

  • 2 cups vegetable broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Sesame seeds for garnish

Instructions

  1. Sauté Aromatics: Heat sesame oil in a skillet or wok. Sauté garlic and ginger.
  2. Add Vegetables: Cook bell pepper, carrots, and snap peas until slightly tender.
  3. Cook Noodles: Add noodles, soy sauce, teriyaki sauce, rice vinegar, brown sugar, and broth. Simmer until noodles are tender.
  4. Thicken Sauce: Stir in cornstarch slurry and cook until sauce thickens.
  5. Finish and Serve: Remove from heat, add green onions, and garnish with sesame seeds.

Notes

  • You can add cooked chicken, shrimp, or tofu for added protein.
