A creamy and healthy twist on classic Alfredo, this One-Pot Greek Yogurt Alfredo Pasta is made with simple ingredients for a rich, satisfying meal with less guilt.

Ingredients

  • 12 oz fettuccine or pasta of choice
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups low-sodium chicken or vegetable broth
  • 1 cup milk (dairy or unsweetened non-dairy)
  • 1 cup plain Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the garlic for 1-2 minutes until fragrant.
  2. Add the pasta, broth, and milk to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, stirring frequently, until pasta is cooked and most liquid is absorbed.
  3. Remove from heat and stir in Greek yogurt and Parmesan cheese until smooth and creamy.
  4. Season with salt and pepper to taste.
  5. Garnish with chopped parsley if desired and serve immediately.
