One Pot Chicken Piccata (30-Minutes)

A quick and flavorful One Pot Chicken Piccata made in just 30 minutes. Tender chicken breasts are cooked in a zesty lemon-butter sauce with capers, perfect for a weeknight dinner.

  • 2 boneless, skinless chicken breasts, halved horizontally
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup fresh lemon juice (about 2 lemons)
  • 1/4 cup capers, drained
  • 2 tablespoons chopped fresh parsley (optional)
  • Lemon slices for garnish (optional)

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. Reduce heat to medium. Add butter and garlic to the skillet; sauté for 1 minute.
  4. Pour in chicken broth and lemon juice, stirring to deglaze the pan and scrape up any brown bits.
  5. Add capers and return chicken to the skillet. Simmer for 5-7 minutes until sauce slightly thickens and chicken is heated through.
  6. Garnish with parsley and lemon slices if desired. Serve immediately.

Notes

  • For extra richness, add a splash of heavy cream to the sauce.
  • Serve with pasta, rice, or crusty bread to soak up the sauce.
  • Double the sauce if serving over a starch.
