Chicken Parmesan Pasta:
1 tablespoon olive oil
1pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Salt and pepper to taste
12ounces uncooked penne or rotini pasta
3cups chicken broth
1 (24 oz) jar marinara sauce
1cup shredded mozzarella cheese
1/2cup grated Parmesan cheese
Optional Toppings:
1/4cup chopped fresh basil or parsley
1/2cup seasoned breadcrumbs
Instructions
Cook Chicken: In a large skillet, cook chicken with seasonings until browned.
Add Ingredients: Stir in pasta, broth, and marinara sauce. Simmer until pasta is tender.
Melt Cheeses: Remove from heat, stir in half of the cheeses until melted. Top with remaining cheese.
Finish and Serve: Cover to melt cheese, then garnish with herbs and breadcrumbs. Serve hot.
Notes
For extra crisp topping, toast the breadcrumbs in olive oil before sprinkling.
