For the Rice:

  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 1/4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1 cup frozen peas and carrots (optional)
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Brown the seasoned chicken pieces for 4–5 minutes. Set aside.
