This One-Pot Cheesy Taco Pasta is a delicious and easy weeknight meal that combines the flavors of tacos with creamy, cheesy pasta. Made with ground beef, spices, tomatoes, pasta, and plenty of cheese, this dish is sure to be a hit with the whole family.

Ingredients

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons taco seasoning

Remaining Ingredients:

  • 1 (10-ounce) can diced tomatoes with green chilies, undrained
  • 2 cups beef broth
  • 8 ounces uncooked pasta shells or rotini
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Chopped fresh cilantro or green onions for garnish (optional)

Instructions

  1. Cook the Ground Beef Mixture: In a large pot over medium heat, cook the ground beef and onion until the beef is browned and the onion is soft. Add the garlic and cook for 30 seconds.
  2. Add Ingredients: Stir in the taco seasoning, diced tomatoes with green chilies, and beef broth. Bring to a boil.
  3. Cook Pasta: Add the uncooked pasta, reduce heat to a simmer, cover, and cook for 12–15 minutes until the pasta is tender.
  4. Add Cheeses: Remove from heat and stir in sour cream, cheddar cheese, and Monterey Jack cheese until melted and creamy.
  5. Season and Garnish: Season with salt and pepper, garnish with cilantro or green onions, and serve.

Notes

  • You can substitute ground turkey or chicken for a leaner version.
  • For extra heat, add jalapeños or a pinch of cayenne.
  • This dish makes great leftovers and reheats well.
