Ingredients

Units Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 (14.5 oz) can diced tomatoes
  • 1/4 cup ketchup
  • 1 tbsp yellow mustard
  • 8 oz uncooked pasta (elbow or rotini)
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • 1 tbsp olive oil (optional, for cooking)
  • Chopped pickles or green onions for garnish (optional)

Instructions

  1. In a large skillet over medium heat, add olive oil (if using) and cook ground beef until browned. Drain excess fat if needed.
  2. Add diced onion and garlic, and sauté for 2-3 minutes until softened.
  3. Stir in beef broth, diced tomatoes, ketchup, mustard, and uncooked pasta. Mix well.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, or until pasta is cooked through.
  5. Stir in shredded cheddar cheese until melted and combined.
  6. Season with salt and pepper to taste. Garnish with chopped pickles or green onions if desired.
  7. Serve hot and enjoy.

Notes

  • Use lean ground beef to reduce grease.
  • For extra flavor, add a dash of Worcestershire sauce.
  • Can substitute ground turkey for a lighter option.
  • Reheats well and makes great leftovers.
