4cups vegetable broth
1cup whole milk
1 teaspoon Dijon mustard

2cups shredded sharp cheddar cheese
1 tablespoon cornstarch mixed with 2 tablespoons cold water

2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2cup milk
2 tablespoons melted butter
Instructions
Soup: In a large pot, melt butter and cook onion until softened. Add garlic, broccoli, broth, milk, mustard, salt, pepper, and paprika. Simmer until broccoli is tender. Stir in cornstarch slurry until slightly thickened. Gradually stir in cheddar cheese until smooth.
Dumplings: Whisk together flour, baking powder, salt, and garlic powder. Add milk and butter, mix until just combined. Drop dumpling dough onto soup, cover, and simmer for 12–15 minutes until cooked through.
Serve warm.
Notes
For extra richness, consider adding cream or nutmeg.
For a smoother texture, use an immersion blender to partially puree the soup before adding dumplings.
