  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 2 cups beef broth
  • 1 can (10 oz) diced tomatoes with green chilies (such as Rotel)
  • 1/2 cup tomato sauce

Cheese and Garnish:

  • 8 ounces uncooked pasta shells
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream and sliced green onions for garnish (optional)

Instructions

  1. Cook Beef and Aromatics: In a large deep skillet or pot over medium heat, cook the ground beef and onion until the beef is browned and the onion is softened, about 5–7 minutes.
