- 14 oz smoked kielbasa, sliced
- 1.5 lbs baby potatoes, halved
- 1 medium onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
- Preheat a large skillet over medium heat and add olive oil.
- Add the halved baby potatoes and cook for about 10-12 minutes, stirring occasionally, until they begin to soften and brown.
- Add the sliced onion and continue cooking for 3-4 minutes until the onion softens.
- Stir in the sliced kielbasa and cook for another 5-7 minutes, until the kielbasa is heated through and lightly browned.
- Season with garlic powder, paprika, salt, and pepper. Stir to combine well.
- Cook for another 2-3 minutes, then remove from heat.
- Garnish with fresh parsley if desired and serve hot.
Notes
- You can use any type of smoked sausage in place of kielbasa.
- Yukon Gold or red potatoes work well for this recipe.
- Add bell peppers or green beans for extra veggies.
- Leftovers reheat well for up to 3 days in the fridge.
