14oz smoked kielbasa, sliced
1.5lbs baby potatoes, halved
1 medium onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1 tbsp fresh parsley, chopped (optional for garnish)
Instructions
Preheat a large skillet over medium heat and add olive oil.
Add the halved baby potatoes and cook for about 10-12 minutes, stirring occasionally, until they begin to soften and brown.
Add the sliced onion and continue cooking for 3-4 minutes until the onion softens.
Stir in the sliced kielbasa and cook for another 5-7 minutes, until the kielbasa is heated through and lightly browned.
Season with garlic powder, paprika, salt, and pepper. Stir to combine well.
Cook for another 2-3 minutes, then remove from heat.
Garnish with fresh parsley if desired and serve hot.
Notes
You can use any type of smoked sausage in place of kielbasa.
Yukon Gold or red potatoes work well for this recipe.
Add bell peppers or green beans for extra veggies.
Leftovers reheat well for up to 3 days in the fridge.
