2 medium sweet potatoes, peeled and diced
1 red bell pepper, diced
1 small red onion, chopped

Instructions
Prepare Ingredients: Heat 1 tablespoon of olive oil in a large skillet. Cook sweet potatoes until slightly softened.

Notes
