Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
Add eggs and vanilla extract; mix until smooth.
Stir in flour, baking soda, salt, and cinnamon until just combined.
Fold in oats and optional mix-ins like raisins or chocolate chips.
Scoop dough onto prepared baking sheets, spacing them about 2 inches apart.
Bake for 10–12 minutes, or until edges are golden and centers are set.
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
