Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
- Add eggs and vanilla extract; mix until smooth.
- Stir in flour, baking soda, salt, and cinnamon until just combined.
- Fold in oats and optional mix-ins like raisins or chocolate chips.
- Scoop dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes, or until edges are golden and centers are set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For softer cookies, bake for 10 minutes; for crispier cookies, bake longer.
- Substitute raisins with dried cranberries or chopped nuts if desired.
- Store cookies in an airtight container for up to 5 days.
