Pie Filling:

  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 3/4 cups whole milk
  • 4 large egg yolks
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Additional:

  • 1 pre-baked 9-inch pie crust
  • Whipped cream or meringue for topping (optional)

Instructions

  1. In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
  2. Slowly whisk in the milk until smooth.

  3. Place the pan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble, about 7–10 minutes.
  4. Reduce the heat to low.

  5. In a separate bowl, lightly beat the egg yolks.
  6. Slowly add about 1/2 cup of the hot chocolate mixture into the yolks, whisking constantly to temper.

  7. Gradually whisk the yolk mixture back into the saucepan.
  8. Continue to cook for another 2–3 minutes, stirring constantly, until the filling is thick and glossy.

  9. Remove from heat and stir in butter and vanilla.
  10. Pour the filling into the pre-baked pie crust and smooth the top.
  11. Let cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or until fully set.
  12. Top with whipped cream or meringue before serving if desired.

Notes

  • For a richer filling, substitute 1/2 cup of the milk with half-and-half or evaporated milk.
  • Make sure to stir constantly to avoid lumps or scorching.
  • This pie is a Southern classic that gets even better the next day.
