Chocolate Filling:
1cup granulated sugar
1/4cup cornstarch
1/4 teaspoon salt
3cups whole milk
4 large egg yolks
4oz semisweet chocolate (chopped)
2 tablespoons unsweetened cocoa powder
2 tablespoons unsalted butter
1 1/2 teaspoons vanilla extract
Whipped Cream Topping:
1cup heavy whipping cream
2 tablespoons powdered sugar (for whipped cream)
Garnish:
Chocolate shavings (optional for garnish)
Instructions
Prepare Chocolate Filling: In a medium saucepan, whisk together sugar, cornstarch, salt, and cocoa powder. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly until thickened, about 8–10 minutes.
Temper Egg Yolks: Lightly beat egg yolks in a bowl. Slowly add hot mixture to yolks, whisking constantly. Return mixture to saucepan and cook until very thick, about 2–3 minutes.
Add Chocolate: Remove from heat and stir in chopped chocolate, butter, and vanilla until smooth. Pour into pie crust and chill for at least 4 hours.
Make Whipped Cream: Whip heavy cream and powdered sugar to soft peaks. Spread over chilled pie and garnish with chocolate shavings.
