  • 2 pounds beef stew meat (cut into 1-inch cubes)
  • 2 tablespoons olive oil

Vegetables:

  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 3 medium carrots (sliced)
  • 3 celery stalks (sliced)
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley (chopped)

Broth and Seasonings:

  • 8 cups beef broth
  • 1 cup pearl barley (rinsed)
  • 1 can (14.5 ounces) diced tomatoes
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Brown the Beef: Heat olive oil in a Dutch oven and brown beef cubes. Remove and set aside.
  2. Sauté Vegetables: Cook onion, carrots, and celery until softened. Add garlic and cook until fragrant.
  3. Cook Stew: Return beef to the pot and add broth, barley, tomatoes, seasonings. Simmer covered for 1 1/2 to 2 hours.
  4. Finish and Serve: Add peas, cook for 5 minutes. Garnish with parsley, remove bay leaves, and serve hot.
