Dough:
3cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon instant yeast
1 1/2cups warm water

1cup raisins
2 tablespoons brown sugar

Mix Dough: In a large bowl, combine flour, salt, cinnamon, yeast, and brown sugar. Add warm water and stir until a shaggy dough forms. Fold in raisins.
Rise: Cover the bowl with plastic wrap and let the dough rise at room temperature for 12 to 18 hours until doubled in size.
Preheat: Preheat oven to 450°F (230°C) with a Dutch oven inside for 30 minutes.
Shape and Rest: Turn dough onto a floured surface, shape into a ball, cover, and let rest for 30 minutes.
Bake: Carefully place dough into the hot Dutch oven, cover, and bake for 30 minutes. Uncover and bake for an additional 10–15 minutes until golden brown. Cool on a wire rack before slicing.
