Ingredients

For the Crust:

    2 cups Golden Oreo cookies (crushed)
    6 tablespoons unsalted butter (melted)

For the Filling:

    2 cups fresh strawberries (diced)
    2 tablespoons sugar
    3 (8 oz) packages cream cheese (softened)
    1 cup powdered sugar
    1 teaspoon vanilla extract
    1 1/2 cups heavy whipping cream
    1 box (3 oz) strawberry gelatin
    1 cup freeze-dried strawberries (crushed)
    1/2 cup Golden Oreo crumbs (for topping)

Instructions

  1. Prepare the Crust: In a medium bowl, combine crushed Golden Oreos and melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Chill in the fridge while preparing the filling.
  2. Prepare the Filling: In a small bowl, toss diced strawberries with sugar and set aside. In a large bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy. In a separate bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture. Gently fold in the sugared strawberries.
  3. Assemble the Cheesecake: Pour the filling over the crust and smooth the top. In another small bowl, mix the strawberry gelatin, crushed freeze-dried strawberries, and remaining Oreo crumbs. Sprinkle evenly over the cheesecake. Cover and refrigerate for at least 6 hours, or overnight, until set. Remove from the springform pan before serving.
