Cheesecake Balls:

  • 8 ounces cream cheese (softened)
  • 1/2 cup pumpkin purée
  • 1/2 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs (divided)
  • pinch of salt

Optional for Decoration:

  • 1/2 cup white chocolate chips

Instructions

  1. In a large bowl, mix the softened cream cheese, pumpkin purée, powdered sugar, pumpkin pie spice, vanilla extract, and a pinch of salt until smooth and creamy.
  2. Stir in 1 cup of graham cracker crumbs until fully combined.
  3. Place the mixture in the refrigerator for 30 minutes to firm up.
  4. Once chilled, scoop tablespoon-sized portions and roll into balls.
  5. Roll each ball in the remaining 1/2 cup of graham cracker crumbs to coat.
  6. If desired, melt white chocolate chips and drizzle over the top for decoration.
  7. Store in the refrigerator until ready to serve.

Notes

  • For extra flavor, add a splash of maple syrup or use gingersnap crumbs instead of graham crackers.
