1 tablespoon coconut oil or shortening (optional, for smoother chocolate)
Instructions
Prepare the Peanut Butter Mixture: In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Gradually add powdered sugar, crushed graham crackers, and salt, stirring until a thick dough forms.
Shape the Balls: Scoop the mixture into tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes.
Coat with Chocolate: Melt chocolate chips (and coconut oil if using) in the microwave, then dip each chilled peanut butter ball into the melted chocolate. Chill again until set.
