Ingredients

Units Scale

For the Peanut Butter Balls:

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 1/2 cups crushed graham crackers (about 10 full sheets)
  • 1/4 teaspoon salt

For the Chocolate Coating:

  • 1 1/2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or shortening (optional, for smoother chocolate)

Instructions

  1. Prepare the Peanut Butter Mixture: In a large mixing bowl, combine peanut butter, softened butter, and vanilla extract. Gradually add powdered sugar, crushed graham crackers, and salt, stirring until a thick dough forms.
  2. Shape the Balls: Scoop the mixture into tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet and chill in the refrigerator for at least 30 minutes.
  3. Coat with Chocolate: Melt chocolate chips (and coconut oil if using) in the microwave, then dip each chilled peanut butter ball into the melted chocolate. Chill again until set.

Notes

  • Store in the refrigerator for up to 1 week or freeze for up to 2 months.
  • You can customize the coating by rolling the balls in cocoa powder or crushed peanuts.
