2cups crushed digestive biscuits or graham crackers
1/2cup unsalted butter, melted
For the Filling:
1 package (8 oz) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/2cup passion fruit pulp (fresh or canned)
1 tablespoon lemon juice
1 teaspoon vanilla extract
1cup heavy cream, whipped
For Topping:
1/4 cup passion fruit pulp
Instructions
Prepare the Base: Line an 8×8-inch baking dish with parchment paper. Mix crushed biscuits with melted butter, press into the base, and chill.
Make the Filling: Beat cream cheese until smooth. Add condensed milk, passion fruit pulp, lemon juice, and vanilla. Fold in whipped cream and spread over the base.
Finish: Spoon remaining passion fruit pulp over the top, swirl lightly, and refrigerate for at least 4 hours. Slice and serve chilled.
Notes
For extra crunch, add shredded coconut or crushed meringue on top.
