Instructions

  1. Prepare the Crust: In a bowl, thoroughly mix the chocolate cookie crumbs with the melted butter until fully combined and crumbly. Then, firmly press this mixture into the bottom of an 8×8-inch dish, creating an even and compact crust layer. Place the crust in the refrigerator to chill and set while you prepare the mousse filling.
  2. Make the Mousse: In a mixing bowl, beat the heavy cream until it begins to thicken. Gradually add the melted semisweet chocolate chips, powdered sugar, and vanilla extract, continuing to beat until the mixture becomes fluffy and well incorporated. Spread this mousse evenly over the chilled crust, smoothing the top. Return the dish to the refrigerator to chill while preparing the chocolate layer.
  3. Add the Chocolate Layer: Gently heat the heavy cream in a saucepan or microwave until it is warm but not boiling. Pour the warm cream over the semisweet chocolate chips set in a separate bowl.
