No Bake Berry Lush is a light, creamy dessert layered with a buttery graham cracker crust, fluffy cheesecake filling, fresh berries, and whipped topping. It’s perfect for summer and requires no baking.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (like Cool Whip), thawed
  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • Additional whipped topping for garnish (optional)

Instructions

  1. In a medium bowl, mix graham cracker crumbs and melted butter until well combined. Press mixture into the bottom of a 9×13 inch dish to form the crust. Refrigerate while preparing the filling.
  2. In a large bowl, beat cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until creamy.
  3. Fold in whipped topping until fully combined. Spread this mixture evenly over the crust.
  4. In another bowl, whisk together instant pudding mix and cold milk until thickened. Spread pudding over the cream cheese layer.
  5. Top with an even layer of mixed berries.
  6. Spread additional whipped topping over the berries if desired.
  7. Refrigerate for at least 4 hours or overnight to set before serving.

Notes

  • You can substitute graham cracker crust with crushed vanilla wafers or digestive biscuits.
  • Use any combination of fresh berries based on availability or preference.
  • Chill overnight for best flavor and texture.
