For the Soup:
2 tablespoons vegetable oil
2 1/2pounds beef shank or brisket, cut into large chunks
6 cloves garlic, smashed
1 thumb-sized piece of ginger, sliced
4 scallions, cut into 2-inch sections
2 tomatoes, quartered
1/2cup soy sauce
1/4cup dark soy sauce
1/4cup rice wine or Shaoxing wine
8cups beef broth or water
2 star anise
1 small cinnamon stick
1 bay leaf
1 teaspoon sugar
Salt to taste
For Serving:
Chinese wheat noodles (or ramen)
Pickled mustard greens
Fresh bok choy or baby spinach
Chopped scallions and cilantro
Chili oil (optional)
Instructions
Heat the oil: Heat the oil in a large pot over medium-high heat. Brown the beef chunks on all sides, working in batches if necessary. Remove and set aside.
Cook noodles and greens: Cook the noodles according to package instructions. In a separate pot, briefly blanch bok choy or spinach until just tender.
Serve: To serve, place noodles in bowls, ladle the rich broth and beef over the top, and garnish with greens, chopped scallions, cilantro, pickled mustard greens, and chili oil if desired.
