Ingredients

Units Scale

Marinade:

  • 1/4 cup Dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Chicken:

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together Dijon mustard, whole grain mustard, olive oil, lemon juice, minced garlic, honey, thyme, salt, and black pepper until well combined.
  2. Marinate the Chicken: Place the chicken in a large zip-top bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, preferably 2 to 4 hours for best flavor.
  3. Cook the Chicken: Remove the chicken from the marinade and grill, bake, or pan-sear until fully cooked and the internal temperature reaches 165°F (74°C). Discard any leftover marinade.

Notes

  • For a stronger mustard flavor, increase the Dijon mustard to 1/3 cup.
  • This marinade works well for grilling, baking, or sautéing.
  • You can also use bone-in chicken pieces, adjusting cook time as needed.
