Meatloaf:

  • 1 1/2 pounds ground beef
  • 1 cup finely chopped mushrooms
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup shredded Swiss cheese
  • 3/4 cup breadcrumbs
  • 2 large eggs
  • 1/4 cup milk
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Topping:

  • 1/4 cup ketchup

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and prepare a baking sheet with parchment paper or a greased loaf pan.
  2. Sauté vegetables: In a skillet, sauté mushrooms, onion, and garlic until softened. Set aside to cool.
  3. Mix ingredients: In a bowl, combine ground beef, sautéed vegetables, Swiss cheese, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, and thyme.
  4. Shape and bake: Shape mixture into a loaf on the baking sheet or in a loaf pan. Top with ketchup and bake for 55–65 minutes until cooked through.
  5. Rest and serve: Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

  • For extra cheesiness, add slices of Swiss cheese on top during the last 10 minutes of baking.
  • Ground turkey or chicken can be substituted for beef.
