Ingredients
Scale
Main Ingredients
- 1 pound lean ground beef
- 10 ounces udon noodles
- 4 cloves garlic, minced (about 4 teaspoons)
Sauce Ingredients
- ½ cup soy sauce
- ¼ cup brown sugar
- ¼ cup beef broth
- 2 tablespoons hoisin sauce
- 2 teaspoons ginger paste or grated ginger
- 1 teaspoon red pepper flakes (optional)
Thickening Agent
- 2 tablespoons cornstarch
- ¼ cup water
Instructions
- Cook Noodles: Cook 10 ounces of udon noodles according to the package directions until tender. Drain well and set aside to be combined later.
- Cook Ground Beef: Heat a large skillet over medium-high heat. Add 1 pound of lean ground beef and cook until it is mostly browned. Add 4 cloves of minced garlic and cook for an additional minute until fragrant. Drain excess fat from the skillet.
- Prepare Sauce: While the beef is cooking, whisk together ½ cup soy sauce, ¼ cup brown sugar, ¼ cup beef broth, 2 tablespoons hoisin sauce, 2 teaspoons ginger paste, and 1 teaspoon red pepper flakes if using, in a separate bowl to create a flavorful sauce.
- Combine Beef and Sauce: Pour the prepared sauce over the cooked ground beef in the skillet. Continue cooking the beef in the sauce, allowing it to absorb the flavors fully.
- Add Noodles: Add the cooked udon noodles to the skillet with the beef and sauce. Toss everything together thoroughly to ensure the noodles are evenly coated.
- Thicken Sauce: In a small bowl, whisk 2 tablespoons cornstarch with ¼ cup water to create a slurry. Pour this mixture into the skillet and continue cooking while stirring until the sauce thickens to a glossy finish and coats the noodles and beef nicely.
- Serve: Remove the skillet from heat. Serve the Mongolian ground beef and noodles hot for a delicious and satisfying meal.
Notes
- You can substitute udon noodles with other thick Asian noodles if preferred.
- Adjust the red pepper flakes according to your desired spice level or omit for a milder dish.
- Drain excess fat carefully to keep the dish lean and avoid greasiness.
- Leftover noodles and beef sauce store well in the refrigerator for up to 3 days.
- For added vegetables, consider stirring in sliced green onions or steamed broccoli.
