1cup all-purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
Wet Ingredients:
1/2cup pumpkin puree
1/2cup granulated sugar
1/4cup brown sugar (packed)
1/3cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Additional:
6 small squares of semi-sweet chocolate (or chocolate truffles)
Optional powdered sugar for dusting
Instructions
Preheat the oven: Preheat the oven to 350°F and line a muffin tin with 6 paper liners.
Prepare the batter: In a large bowl, whisk together pumpkin puree, sugars, oil, eggs, and vanilla until smooth. In a separate bowl, whisk together the dry ingredients. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fill the muffin cups: Fill each muffin cup halfway with batter. Place one square of chocolate in the center of each and cover with more batter until about 3/4 full.
Bake: Bake for 16–18 minutes, or until the tops are set but still soft in the center.
Cool and serve: Let muffins cool for 5 minutes before serving warm. Dust with powdered sugar if desired.
Notes
For an extra gooey center, use a soft chocolate truffle or ganache-filled chocolate.
These muffins are best enjoyed warm to get the full molten effect.
