Cookies:

  • 1/2 teaspoon salt
  • 3/4 cup finely chopped chocolate chips or mini chocolate chips
  • 1/2 cup finely chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven and prepare baking sheet: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large mixing bowl, cream the softened butter and ½ cup powdered sugar until light and fluffy. Mix in vanilla and peppermint extracts.
  3. Add dry ingredients: Gradually add the flour and salt, mixing until just combined. Stir in the chocolate chips and nuts, if using.
  4. Shape and bake: Scoop dough and roll into 1-inch balls. Place on the prepared baking sheet about 1 inch apart. Bake for 10–12 minutes, or until the bottoms are lightly golden.
