1 1/2cups chocolate cookie crumbs
1/2cup unsalted butter, melted
1cup sweetened condensed milk
1/2 teaspoon mint extract
1cup white chocolate chips
1cup semi-sweet chocolate chips
1cup shredded coconut
1/2cup chopped nuts (optional)
Green food coloring (optional)
Instructions
Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper or lightly grease it.
In a bowl, mix chocolate cookie crumbs with melted butter. Press firmly into the bottom of the prepared dish to form the crust.
In another bowl, mix sweetened condensed milk with mint extract and a few drops of green food coloring if using.
Pour the mint mixture evenly over the crust.
Sprinkle white chocolate chips, semi-sweet chocolate chips, shredded coconut, and nuts (if using) evenly over the top.
Gently press the toppings down with a spatula.
Bake for 25–30 minutes, or until edges are lightly browned and center is set.
Cool completely before cutting into bars.
Notes
Store bars in an airtight container at room temperature for up to 5 days.
For a stronger mint flavor, add a bit more mint extract.
You can use graham cracker crumbs instead of chocolate cookie crumbs for a different base.
