green food coloring (optional)

Instructions
Preheat the oven: Preheat the oven to 350°F and line a baking sheet with parchment paper.
Cream butter and sugar: In a large bowl, cream the softened butter and powdered sugar until light and fluffy.
Add extracts and color: Mix in the peppermint and vanilla extracts, and green food coloring if desired.
Combine dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add to the butter mixture.
Add mix-ins: Fold in the mini chocolate chips and nuts, if using.
Form dough balls: Scoop out tablespoon-sized portions, roll into balls, and place on the baking sheet.
Bake: Bake for 10–12 minutes until lightly golden on the bottoms.
Roll in sugar: Let the cookies cool slightly, then roll in powdered sugar. Once fully cooled, roll again for a snowy finish.
Notes
You can omit the food coloring for a natural look.
For a richer mint flavor, use mint chocolate chips instead of plain.
