  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

For the Cheesecake:

  • 16 ounces cream cheese, softened (2 packages)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

For Topping:

  • 1/2 cup caramel sauce
  • 1/2 cup chopped pecans
  • 1/2 cup mini chocolate chips or melted chocolate for drizzle

Instructions

  1. Preheat and Prepare: Preheat oven to 325°F (163°C) and line a 12-cup muffin pan with paper liners.
  2. Create Crust: Mix graham cracker crumbs, 2 tablespoons sugar, and melted butter. Press mixture into the bottom of each liner.
  3. Make Cheesecake Batter: Beat cream cheese and 1/2 cup sugar until smooth. Add vanilla, eggs one at a time, and sour cream. Spoon batter over crusts.
  4. Bake: Bake for 18–22 minutes until set. Cool, then chill for at least 2 hours.
  5. Decorate: Top each cheesecake with caramel sauce, chopped pecans, and melted chocolate or mini chocolate chips. Serve chilled.
