  • 1/3 cup vegetable oil
  • 2 large eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a mini muffin tin with paper liners or spray with nonstick spray.
  2. Prepare the dry ingredients: In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. Mix the wet ingredients: In another bowl, whisk together the oil, eggs, milk, and vanilla extract. Pour the wet ingredients into the dry and stir just until combined—do not overmix.
  4. Add chocolate chips: Gently fold in the mini chocolate chips.
  5. Bake: Spoon the batter evenly into the prepared muffin tin, filling each cup about ¾ full. Bake for 10–12 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let muffins cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
