These Mini Cherry Cheesecake Bites are the perfect bite-sized dessert for any occasion. Creamy cheesecake filling on a graham cracker crust topped with sweet cherry pie filling – they’re irresistible!

Graham Cracker Crust:

  • 1 cup graham cracker crumbs
  • 3 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

Cheesecake Filling:

  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 tablespoon all-purpose flour

Topping:

  • 1 (21-ounce) can cherry pie filling

Instructions

  1. Preheat the oven: Preheat the oven to 325°F (163°C) and line a mini muffin tin with 24 mini cupcake liners.
  2. Prepare the crust: Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press mixture into liners.
  3. Make the filling: Beat cream cheese, sugar, vanilla, eggs, sour cream, and flour until smooth. Spoon over crust.
  4. Bake: Bake for 15–18 minutes until set. Cool, then chill for at least 2 hours.
  5. Top and serve: Before serving, add cherry pie filling on top of each bite.
