Graham Cracker Crust:
1cup graham cracker crumbs
3 tablespoons granulated sugar
4 tablespoons unsalted butter, melted
Cheesecake Filling:
2 (8-ounce) packages cream cheese, softened
1/2cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/4cup sour cream
1 tablespoon all-purpose flour
Topping:
1 (21-ounce) can cherry pie filling
Instructions
Preheat the oven: Preheat the oven to 325°F (163°C) and line a mini muffin tin with 24 mini cupcake liners.
Prepare the crust: Mix graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press mixture into liners.
Make the filling: Beat cream cheese, sugar, vanilla, eggs, sour cream, and flour until smooth. Spoon over crust.
Bake: Bake for 15–18 minutes until set. Cool, then chill for at least 2 hours.
Top and serve: Before serving, add cherry pie filling on top of each bite.
Notes
You can use any pie filling like blueberry or strawberry.
These bites freeze well for make-ahead convenience.
