  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika

Additional Ingredients:

  • 1 large egg
  • 1/3 cup crumbled cotija cheese (or feta)
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream or Mexican crema
  • 1 tbsp lime juice
  • 1 tbsp mayonnaise (optional)
  • vegetable oil for frying

Instructions

  1. Prepare the Fritter Batter: In a large bowl, combine flour, cornmeal, baking powder, salt, chili powder, cumin, and smoked paprika.
  2. Mix Wet Ingredients: In a separate bowl, whisk the egg, then add corn, cotija cheese, green onions, cilantro, sour cream, lime juice, and mayonnaise if using.
