  • 2 medium tomatoes, diced (or 1 cup canned diced tomatoes)
  • 1 medium potato, diced small
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots

Sauce and Seasonings:

  • 1/4 cup tomato sauce
  • 1/4 cup beef broth or water
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili powder (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Ground Beef: Heat olive oil in a skillet, brown the ground beef, and drain excess fat.
  2. Add Vegetables: Cook onions and garlic, then add tomatoes, potatoes, peas, carrots, tomato sauce, beef broth, and seasonings.
  3. Simmer: Cover and cook for 15–20 minutes until vegetables are tender, adding peas in the last 5 minutes.
