  • 1 pound ground beef or ground turkey
  • 1 small yellow onion (diced)
  • 2 garlic cloves (minced)
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 1 can (15 ounces) corn (drained)
  • 1 can (10 ounces) diced tomatoes with green chilies (undrained)
  • 1 cup cooked white rice
  • 1/2 cup sour cream
  • 1 1/2 cups shredded Mexican blend cheese (divided)
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook the meat: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease, then add diced onion and garlic. Cook until softened.
  3. Add seasonings and veggies: Stir in taco seasoning, black beans, corn, and diced tomatoes with green chilies. Simmer for 5 minutes.
  4. Mix in rice and cheese: Remove from heat and stir in cooked rice, sour cream, and 1 cup of shredded cheese. Mix well.
  5. Assemble and bake: Spread mixture in the baking dish, top with remaining cheese. Bake for 20–25 minutes until bubbly.
