Instructions

  5. Scramble eggs: Crack the eggs into the skillet over the tomato mixture. Let them sit briefly, then gently stir to scramble. Cook until just set but still soft, about 2–3 minutes.
  6. Garnish and serve: Remove from heat, garnish with parsley, and serve hot with crusty bread.
